A 5-star hotel without stars. For us, it is a place where people can connect and feel at home.

What is the story behind Paragon 700, what was your inspiration to create it?

Once the home of Ostuni's first mayor, Don Paolo Tanzarella, Palazzo Rosso has a fascinating past. This venerable stone building has long been at the centre of the town's social and cultural life, with the oldest parts dating back to the 18th century.

After removing several layers of paint from the interior walls, we uncovered wonderful Neoclassical frescoes depicting mythological animals, such as dragons and griffins. From these creatures, we decided to adopt the dragon as our logo.

How would you describe the atmosphere and the interior design of Paragon 700?

Paragon 700 features an eclectic, cosmopolitan decor, with every item having its place. Studied to the smallest detail, there is nothing that hasn’t been specially chosen for where and what it is used for.

The rooms are decorated with pieces from around the globe, giving Paragon 700 a multicultural elegance. It’s this unusual yet perfectly balanced combination that is the trademark of our interior designer, Pascale Lauber. 

To you personally, what is so special about Paragon 700?

At first sight, we immediately realised the potential of this jewel: the height of the ceilings, the vaults, the frescoes and the red stone. They all made the Palazzo so special. Additionally, it had a unique design with very special attention to detail.

Paragon 700 comprises 11 rooms and suites, all of which are an ode to beauty. Coexisting with the 18th-century frescoes are antique French and Italian armchairs, large Thai chandeliers and headboards made by South African craftsmen. 

We offer four room categories, ranging from Deluxe (the smallest) to the singular Paragon Suite. Our Deluxe Suites are a mid-range option while the Loft Suites are a little higher-end.

I’d recommend visiting the Valle d’Itria towns of Cisternino, Locorotondo and Martina Franca, as well as the trulli town of Alberobello. Considered the “Florence of the South”, Lecce is not to be missed, nor is the ITALICS Art & Landscape in Monopoli, which is a 30-minute drive from Paragon 700.

Puglia is a year-round destination. But we suggest visiting in the off-season (Feb-May) or in autumn (Oct-Dec) when it is not too crowded and not too hot.
